Spicy Halloumi Bites

 

Ingredients

  • Garlic oil
  • 3 tablespoons chopped parsley
  • 2 tablespoons lime juice
  • Freshly ground pepper
  • Halloumi cheese
     

Method

 

  1. Mix the oil, parsley, lime juice, and pepper in a large shallow dish.
  2. Drain the halloumi, then slice into small strips (they don't need to be perfect!)
  3. Lightly coat the Rondue with a little garlic oil then grill the slices of cheese until golden on both sides; this should take just a couple of minutes.
  4. Serve on a bed of your favourite salad with cherry tomatoes, warmed through a little on the Rondue first. Or try filling some mini pittas and serve with creamy dips for a quick and tasty treat.
