Seared Beef Slices in Coriander and Lime Dressing


Ingredients

  • Sliced fillet steaks (about a cm thick)
  • Marinade (why not choose from one of
    our recipes)
  • Juice & zest of 1 lime
  • Crushed black peppercorns
  • Red chilli chopped
  • Clove garlic chopped
  • Piece fresh ginger (about the size of a walnut) peeled and chopped
  • Handful coriander finely chopped
  • Salt
  • Olive oil spray (or you could simply brush on some olive oil yourself)

Method
 

  1. Slice the meat and mix through the chopped chilli, garlic, ginger, finely chopped coriander and lime zest.
  2. Cover with cling film and chill for about an hour (to allow the flavours to infuse the meat).
  3. Lay the slices of beef, sprinkled with the lime juice on a serving plate and lightly spray with olive oil and season with salt. Finally pass each piece through the finely crushed peppercorn. (These two stages can be done well in advance of cooking to save time.)
  4. Lightly spray the Rondue's grill plate with olive oil and warm up the Rondue.
  5. Remove prepared beef slices from the fridge and allow them to come to room temperature.
  6. When the plate is sufficiently hot, add the slices of beef allowing plenty of room in between each piece. We find it's best to allow each person to cook their own beef as they are ready to eat it.

Serve with Coriander Lime Rice.

  • 150 - 200g long grain rice
  • Salt
  • Juice and zest of 1 lime
  • Handful of chopped coriander

Method
 

  1. Prepare rice in usual way and drain well.
  2. Prior to serving add in the juice and zest of lime and the freshly chopped coriander.
