Grew up in Cambridge and did my apprenticeship with Addenbrookes hospital where I gained my C&G 706/1 and 706/2 (NVQ's now). Addenbrroks was the largest teaching hospital in the country at the time.
From there I moved on to various University sites including Clare and Sidney Sussex. From there it was time to move out of food and find a 9 to 5! It never lasts food is in the blood!
I then spent sometime in Suffolk and then moved down south, where I came to specialise in golf club catering, I have worked in many from the Royal at Eastbourne to where I am at present at the London Golf Club in Kent.
Us chefs are always asked .... whats your Speciality dish ....... there isn't one, WE LOVE FOOD! But give me the pick on a menu that someone else is cooking and I'd pick Veal, or the Sea Bass, or the Lamb .... the Choice is endless!!! It's all about good food.
