Mexican Fajitas


Ingredients


* Boneless and skinless chicken breast fillets, sliced into thin strips (or you can use quorn chicken pieces or tofu)
* Fajita spice mix – try one of our recipes here
* A medium sized onion
* A few chopped peppers (we like red & yellow)
* Splash of olive oil
* Flour tortillas
* Guacamole Dip (you can find great bought versions but it's more fun to make your own)
* Fresh soured cream or Crème fraiche
 

Method


1. Place sliced chicken in a bowl with the spice mix and a splash of olive oil. Toss to coat the chicken evenly, then cover and leave to stand for at least 15 minutes.
2. Peel and slice the onion.
3. De-seed the peppers. We like ours thinnly sliced but chunks give a bigger bite!
4. Lightly coat the Rondue's grill plate with a little olive oil and heat for 10 minutes.
5. When the Rondue is sufficiently hot, place some of the peppers and onion (enough for one tortilla) on the Rondue and cook until they begin to soften. Add the chicken strips and cook for a further 6-8 minutes, turning half way through until golden, sizzling and cooked through.
6. Meanwhile, place the tortillas under grill until hot, turning once.
7. Serve a generous amount of the chicken, pepper and onions mixture onto each tortilla, then top with a spoonful of guacamole and soured cream and salsa dip if you like.
8. Roll up the tortilla and go!

We love these served with fresh lime wedges for a zingy twist but smoked grated cheese also tastes great. To make them go further, try adding any other fruit and veg you have lying around to the wrap. Let your guests fill their own to taste. Have fun experimenting!
